We tasted this meal at friends of our workaway host, for New Year's Eve.

- 1.5kg pork meat with bone
- 800g of sauerkraut
- 750g of dumpling dough
- salt
- pepper
- butter
- cumin
- 2 cloves garlic
- 3 onions
- 3 carrots
- 200g of celery
- 2 bay leaves
- 1.5 liters of hot water
- 1 teaspoon sugar
- 4 juniper berries
- 1 pack of roasted pork sauce
- 1 teaspoon of instant broth
- parsley for garnish
- Wash the meat, dry it with paper towels, salt and pepper on every side.
- Fry the roast in a buttered pan.
- Fry the onions. Add the garlic cloves, carrots and celery.
- Deglaze with hot water and spices.
- Cook the roast with the lid for 1h30 to 2h.
- Turn the roast several times, adding water if necessary.
- At the end of cooking, remove the roast from the oven and let it rest covered.
- Take the spices and vegetables from the sauce.
- Add a package of roasted pork sauce and let the sauce boil briefly.
- Fry the onions in butter, add the sugar and caramelize.
- Add sauerkraut and juniper berries.
- Deglaze with a little broth.
- Simmer for 20 minutes with the lid closed.
- Stir occasionally adding broth if necessary.
- Cook the dumplings in salted water according to the instructions on the package.
- Cut the pork into slices.
- Serve roasted pork with dumplings, sauce, sauerkraut and roasted vegetables garnished with parsley.
